Taco Casserole

What’s awesome about family and friends who also do keto? Aside from the lack of judgement for your way of eating, it means more recipes to share, or not. Earlier this week my friend Heather sent me a link to a recipe she made and loved. When I looked it over I knew it was a must because it only had five ingredients! I’m always on board for a simple, but flavorful recipe that takes me no time to make, and that’s exactly what this is! I give you: Taco Casserole.

First, preheat your oven to 400. Then brown 1.5-2lb of your choice of ground meat. We did ground beef. After you drain the beef, add your taco seasoning. We use a lot of Flavor God seasonings because they’re free of unnecessary fillers and are totally keto! You’d be surprised that most packaged taco seasoning contains sugar. So, definitely make your own over the store bought shit. For this recipe we did FG Taco Tuesday seasoning. Add 2-3Tbsp and mix it up.

Next, dump it into a greased baking dish. I used a 9×13.

Now, in a bowl you’ll mix the sauce. It’s 1 cup preferred salsa, 2 cups (16oz) full-fat cottage cheese, and 1 cup shredded cheddar. Yes, I know that the packaged shredded cheese isn’t true keto, but I’m a busy mom and lazy and don’t want to shred my own. Sue me.

Pour the mixed sauce over the top of the meat and sprinkle another 1/2 cup shredded cheddar on top.

Bake for 25 minutes and then enjoy to your heart’s desire! Top with your favorite taco toppings: tomatoes, avocado, shredded lettuce, sour cream, guacamole, hot sauce… So many possibilities.

The macros are pretty low for this considering it’s made with so few ingredients. I definitely recommend keeping this one in rotation for it’s simplicity alone.
