Keto Chili

Nothing screams comfort food and fall has arrived like a big ‘ol batch of delicious and hearty chili. Obviously only keto we can’t have beans/legumes, so it makes most traditional recipes null and void. My favorite and traditional recipe doesn’t work because it uses three kinds of beans and beer. Luckily I found a great recipe by combining two other recipes together. It was also recommended to use boiled peanuts in place of beans but I haven’t been able to track any down as of yet to try.

What I love about the recipe I used is that it’s done in the Instant Pot so it doesn’t take all day in the slow cooker. If you don’t have an IP, I’m sure the slow cooker method would work just fine!

1 lb ground beef

1 lb pork sausage

2 Tbsp minced garlic

1 green pepper diced

½ yellow onion diced

3 tablespoons butter

1 10 oz can Rotel Tomatoes

1 14 oz can stewed tomatoes

1 6oz can tomato paste

1¼ tablespoon cumin

2½ tablespoon chili powder

1 tablespoon + 1 teaspoon curry powder

2 cups beef broth

1 teaspoon salt

2 tsp pepper

Using an instant pot:

“Saute” the onion, pepper, and garlic with about 3-4 Tbsp bacon grease or preferred oil.

Add beef and sausage and brown.

Drain.

Add remaining ingredients and spices but don’t mix.

Close lid and select “soup” for 12 min.

Let natural release for 10min and then quick release.

Serve with preferred toppings- onions, sour cream, hot sauce, cheese etc.
